Protect Profitability
See which items make money, which quietly lose it, and where pricing or purchasing needs attention.
From Chef Cory
Hi, I’m Chef Cory. I started my culinary apprenticeship at 16 and spent three decades in restaurants. Alongside the kitchen, I built a twenty-year career in technology and business intelligence.
Project MISE is an AI-powered operating system that helps restaurants make better decisions about food cost, labor, and profitability.

The Reality
Corporate groups employ controllers, procurement analysts, financial teams, menu strategists, and loss-prevention staff. Independent operators often make the same decisions alone, between service, payroll, vendor calls, and the next emergency.
What changes for your restaurant

See which items make money, which quietly lose it, and where pricing or purchasing needs attention.

Find the gaps between what should have happened and what actually moved through the restaurant.

Connect staffing, prep, dayparts, sales, and purchasing so the next decision has real context.
How It Works
Invoices, menus, recipes, POS, payroll, inventory—we accept it all.
We organize, clean, and connect your data.
We identify changes, trends, and what deserves attention.
You get clarity, context, and recommendations.
Approve, adjust, act. We track the results.
Sample Daily Operating Brief
Good morning. Here is what needs attention.
Our Mission
Restaurant owners should not have to choose between operating on instinct and hiring an executive team they cannot afford.
Project MISE exists to make restaurant financial and operating intelligence accessible to owners, chefs, managers, and families carrying the weight of the business every day.
We are not building technology for technology’s sake.
We are building a practical system that helps restaurant owners protect what they built, keep more of what they earn, and make decisions with greater confidence.
Chef Cory’s Story
My restaurant life began with an ACF culinary apprenticeship at 16. Thirty years later, I still know the pressure behind every invoice, prep list, payroll run, and late-night decision.
Alongside the kitchen, I spent twenty years building technology and business-intelligence systems. MIT’s Applied Data Science program in 2021 gave those two paths a common language.
Two decades ago, we built MisEnSoft, an early food-cost platform. Project MISE is not a revival of old software.
It is my attempt to give independent operators the support big groups take for granted.
